Ditch the Mayo and Try This Heart-Healthy Greek Potato Salad

This fresh Mediterranean take on a classic Summer side dish uses vitamin-rich potatoes with heart-healthy olive oil and tangy red wine vinegar instead of gut-blasting mayonnaise.

Greek Potato Salad

INGREDIENTS

    • 3.5 lbs. Yukon potatoes
    • 1/2 cup salt
    • 3/4 cup olive oil
    • 3 oz. red wine vinegar
    • 1 bunch sliced green onions
    • 1/2 cup chopped parsley
    • 1 tbsp. kosher salt
    • 1 tbsp. black pepper

    INSTRUCTIONS

    1. Put potatoes in a large pot of water with the 1/2 cup salt and bring to a boil. Once the potatoes come to a boil, turn down the heat to a medium simmer and cook until just tender, 25-30 minutes. Drain and let cool.

    2. When the potatoes are cool, quarter and slice them into 1/2-inch slices.

    3. In a mixing bowl, add potatoes and the rest of the ingredients and toss well.

    4. Chill and serve.
