After passing through Texas and Missouri on our culinary tour of this nation's iconic barbecue regions, we're proceeding southeast to Tennessee, where Memphis is the capital of this state's meat smoking tradition. Famous for its pork ribs and pulled-pork sandwiches, Memphis boasts a number of world-class smokehouses that give nearby Graceland a run for its money in the popularity contest.

While it's known for its incredibly flavorful dry rub, adherents to this style of barbecue will tell you that most of the flavor comes from the high-quality meat and the slow smoking process, which result in delicious, tender meat even without seasonings. But don't discount the sauce! If you order a rack of ribs, many spots will provide a thin, tangy, tomato-and-vinegar-based sauce — on the side, mind you. This pungent, pucker-inducing dressing will also come drizzled across your pulled-pork sandwich.

These days, Memphis barbecue has hit the mainstream with local restaurateurs Pat and Gina Neely exploding as Food Network celebrities and Justin Timberlake planning to expand his Southern Hospitality barbecue restaurants nationwide. While in Knoxville to watch a University of Tennessee football game, my husband experienced some Southern hospitality of his own when a Vols fan invited him to a true Tennessee-style tailgate barbecue. Out and About: Tennessee's Shelby Farms Park

Memphis' Shelby Farms is one of the largest urban parks in the US with around 4,500 acres of forest, wetlands, and meadows.

Memphis' Shelby Farms is one of the largest urban parks in the US with around 4,500 acres of forest, wetlands, and meadows. With horseback riding, a resident herd of bison, and many other animals that call this park home, there's plenty of nature to observe. In addition to the park's many people-geared features (like picnics and paddleboats), there is a multi-acre off-leash dog park for the pooches! While the park is overseen by the Park Conservancy, the huge Shelby Farms Dog Off-leash area has its own organization to advocate for public education about dog park etiquette and safety along with any maintenance and park improvements to make this place even better for local dogs and dog owners. Located on the northeast part of the map, the off-leash area is mostly fenced (around parking lots and any roads) but, because the grounds are so expansive, it's necessary that any dogs playing here are under voice control at all times – it's not the park for pups that will be too distracted by the scents and sounds of other animals to stay close by.

Song of the Day: Memphis, "I'll Do Whatever You Want"

Memphis — was recorded in the dead of the Canadian winter. But somehow, the music makes the perfect soundtrack for long Summer days, when twilight still lingers at 9 p.m. Released this week, Wilderness is the sophomore album from the Vancouver duo of Chris Dumont and Torquil Campbell, who founded the Canadian group Stars and — weirdly — also guest-starred on "Sex and the City."

Calling to mind the Cocteau Twins and Mojave 3, Memphis's music is jazzy and hazy, with lots of brass and saxophones and slight country undertones. I particularly like the swingy pop song "I'll Do Whatever You Want," which reminds me a little bit of Belle and Sebastian. You can listen to the track and several others on the band's MySpace page.
